制作工艺
1. 腊牛肉做工相当讲究,要先腌肉,后炖肉。肉腌好后再放入老汤中炖肉,老汤是牛骨头熬
的清汤,炖肉时还要依次加入大料、花椒、香砂、茴香、梁姜、白芷、桂皮、盐以及红曲米等等独家配料;这样几个小时文火慢炖之后,炖熟的腊牛肉泽红润、又酥又烂,那可真是香气四溢、入口即化。
2.讲完腊牛肉接着就要说说馍了,腊牛肉夹馍所用的面饼,不是普通的白吉馍,而是西安穆斯林特有的传统食品—饦饦馍。西安著名美食——“羊肉泡馍”用的就是饦饦馍,不过羊肉泡馍用的是死面馍,而腊牛肉夹馍用的是半发面馍。这种馍饼,饼身洁白,纹路金黄,即筋劲十足又绵软香甜。趁热切开刚出炉的饦饦馍,夹上肥瘦相间、又香又烂的腊牛肉,简直妙不可言!
Making Method
